    Lo Mein is one of our favorite vegetarian dinners, so trying Instant Pot Lo Mein was something we were excited to try! If you have not started the new Weight Watchers Freestyle program yet, now is the time! They've added over 200 zero point foods, including lean chicken and turkey (which you can easily add to this recipe without adding points).

    Instant Pot Lo Mein

    If you don't have an Instant Pot yet, make sure you check for deals (grab it when it's under $100 here)! If you have an Instant Pot but haven't taken it out of the box yet, this dish is a great one to start with. It's simple, and you can switch some of the spices up a bit if you want, without messing anything up.

    Serves 6; 6 Weight Watchers Freestyle Points each serving

    Use 6QT Cooker!

    Saute sesame oil, garlic, and red onion until tender.

    Add rice wine vinegar, vegetable stock, lemon juice, soy sauce, and brown sugar and mix until blended well.

    Add uncooked lo mein/rice noodles.

    Add carrots, mushrooms, and snow peas.

    Lock lid and set vent to sealing.

    Press manual button and set to high for 5 minutes.

    Quick pressure release carefully.

    Serve and Enjoy!

    • 1 tablespoon sesame oil
    • 2 cloves minced garlic
    • ½ cup diced red onion
    • 2 cups sliced mushrooms
    • 1 cup julienned carrots
    • 1 cup snow peas
    • 2 tablespoons rice wine vinegar
    • 1 ½ cup vegetable stock
    • Juice of 1 lemon
    • 3 tablespoons soy sauce
    • ⅓ cup brown sugar
    • 8 oz lo mein/rice noodles
    • Salt & Pepper to taste
    1. Saute sesame oil, garlic, and red onion until tender
    2. Add rice wine vinegar, vegetable stock, lemon juice, soy sauce, and brown sugar and mix until blended well
    3. Add uncooked lo mein/rice noodles
    4. Add carrots, mushrooms, and snow peas
    5. Lock lid and set vent to sealing
    6. Press manual button and set to high for 5 minutes
    7. Quick pressure release carefully
    8. Serve and Enjoy!

    How many people are you cooking for?

  • I have whole wheat lo mein noodles. Any ideas how this might change the cooking time/process?

    1. They cook so fast, I don’t think it would change it much, if at all. :)

        1. Okay, I made this last night with uncooked whole wheat lo mein noodles, and it did end up looking very much like the picture. The amount of soy sauce called for seemed like a lot, and in the end, it was way, way, too much. I will use less than half next time.

          Also, because the noodles were uncooked, they required much more water to be added, and a cooking time of about ten minutes was necessary. None of this is the fault of the recipe (except maybe the soy sauce), just necessary tinkering because of the different type of noodles. However, I will make this again, and I will try it with the rice noodles at some point, too. I think this is a great basic recipe…but go easy on the soy sauce in the pot. You can always add more. You can’t take it away.

          1. Do you mind sharing how much water you used for uncooked noodles? I want to try this- but my noodles are not pre-cooked.

          2. Agreed, Becki. This was way too much soy sauce even with reduced sodium the flavor was overpowering. Next time I think I’ll start with 1/3c and work up from there if necessary.

            I used uncooked rice noodles and a bag of frozen vegetables. Everything cooked great.

  • If you added raw cubed chicken how much longer would it need to be cooked?

    1. I would not put raw chicken in with this because I’d think the raw chicken will take longer and the noodles would get soggy.

    2. If you had cubed chicken you sauteed with the veggies I wouldn’t think it would take any longer. I was surprised the noodles take 12 min at high pressure. A chicken breast normally takes around that time.

  • This sounds great!! We are not vegan & my husband needs protein in his diet. Do you think we could just toss in some pre-cooked chicken?

    I can’t wait to try this! I’m avoiding processed sugar, so do we think an alternative to brown sugar, or reducing the brown sugar maybe by half, would be a possibility? I’m new to pressure cooking, so I imagine browning the chicken in the pot first then adding the rest would give a good flavor and avoid the soggy noodle situation, yes?

    1. You could do a TINY bit of brown sugar (or any sugar) and it’ll still be tasty! :) And yes, cook the chicken first.

  • This was definitely made for a 6 Qt cooker or smaller. These proportions don’t work well in an 8 Qt at all. Noodles weren’t cooked, and since it took longer to pressurize from the larger pot to fill and small amount of water, the bottom ingredients burnt. Total mess. Will surely try again with a smaller cooker next time! Or more liquid for sure.

  • Why is a 6qt cooker recommend over the 8qt? I have the 8 at so wondering what should be adjusted
